Preparation
- Preheat the oven to the temperature indicated on the puff pastry package.
- Wash and dry the Nama tomatoes. Cut the tomatoes into thin slices and set aside.
- Drain the mozzarella and cut it into thin slices.
- Roll out the puff pastry on a clean surface or on a baking tray lined with parchment paper.
- Divide the puff pastry into triangles.
- Place a slice of Nama tomato on each triangle of puff pastry.
- Add a slice of mozzarella on top of the tomato.
- Place a few fresh basil leaves on top of the mozzarella.
- Add a pinch of salt and ground black pepper on each croissant.
- Roll the triangles of puff pastry from the base towards the top, forming the croissants. Make sure to seal the edges well.
- In a bowl, beat the egg yolk and gently brush it on the surface of the croissants. This will give them a golden colour when baked.
- If desired, you can sprinkle the croissants with sesame seeds for extra crunch.
- Place the croissants on a baking tray and bake them in the preheated oven according to the directions on the package, usually for 10-12 minutes or until they are golden brown and puffy.
- Take the savoury croissants with Nama tomatoes out of the oven, let them cool for a few minutes and then serve when still hot.
