Aubergine parmigiana with Nama tomato

Ingredients

  • Aubergines
  • Nama tomatoes, peeled and chopped
  • Mozzarella
  • Grated Parmigiano Reggiano
  • Fresh basil
  • Extra virgin olive oil
  • Salt and pepper

Cooking time

  • Grilling or frying the aubergines: 15-20 minutes
  • Preparing the sauce: 15-20 minutes
  • Baking: approx. 20-30 minutes

Preparation

  • Slice the aubergines, grill or fry them until golden brown and set aside.
  • In a saucepan, prepare a sauce with Nama tomatoes, basil, salt and pepper.
  • In a baking tray, alternate layers of aubergines, sauce, mozzarella and Parmigiano.
  • Repeat the layers until you run out of ingredients, making sure the last layer is cheese.
  • Bake in a preheated oven at 180°C until the cheese has melted and the surface is golden brown.
