Aubergine parmigiana with Nama tomato

- Aubergines
- Nama tomatoes, peeled and chopped
- Mozzarella
- Grated Parmigiano Reggiano
- Fresh basil
- Extra virgin olive oil
- Salt and pepper
Cooking time
- Grilling or frying the aubergines: 15-20 minutes
- Preparing the sauce: 15-20 minutes
- Baking: approx. 20-30 minutes

Preparation
- Slice the aubergines, grill or fry them until golden brown and set aside.
- In a saucepan, prepare a sauce with Nama tomatoes, basil, salt and pepper.
- In a baking tray, alternate layers of aubergines, sauce, mozzarella and Parmigiano.
- Repeat the layers until you run out of ingredients, making sure the last layer is cheese.
- Bake in a preheated oven at 180°C until the cheese has melted and the surface is golden brown.
